It just doesn't! It must make it less short, more cakey. It should just be flour, sugar and butter - though the sainted Delia adds semolina for crunch. You didn't get the recipe from an American website by any chance? They love putting egg in biscuits and in my experience they're never improved by it.
It could have come from an American recipe actually, I don't know. But now I know what my next off-grid baking post will be about, I shall try duck shaped proper shortbread and see if I like it better!
